Banana Oatmeal Pancakes. Three words that somehow become a little magical when combined.✨ We love to make these during the weekend. It is a ridiculously simple recipe that delivers high on the comfort front. All it needs is a dollop of Abbot Kinney’s Coco Start, caramelised banana, a generous smear of peanut butter & drizzle of Meli honey. Other options include strawberry jam & cinnamon, maple syrup & walnuts, or greek yoghurt & blueberries. And always a slow coffee on the side, for obvious – coffee lovin’ – reasons. ‘Cause brunch.

These vegan pancakes can be made in your blender.

Serves: 4
What do you need
  • 1 heaping cup rolled oats
  • ¼ cup oatmeal milk or chufa
  • 1 ripe banana
  • 1 tbsp baking powder
  • 1 tbsp apple cider vinegar
  • 1 tbsp Meli honey
  • 1 tbsp almond butter
  • 1 tsp vanilla extract
  • 1 tsp chia seeds
Toppings
  • banana
  • Abbot Kinney's Coco Start
  • Meli honey
  • Peanut butter
How do you make it
  1. Combine all the ingredients in a blender.
  2. Blend until smooth.
  3. Allow the batter to rest for 10 minutes, so the oats can absorb the liquids and thicken.
  4. Time for the toppings: go all the way and make the best out of brunch Sunday.
