Since Indian Summer has come by, we’re stretching that blissful summer feeling a little longer before fall kicks in with all its pumpkin spice and cinnamon flavours. These rising weekend temperatures can only mean one thing: ice popsicles for a crowd of friends. Am i right? We’ve come up with no less than five ice popsicle recipes.
Yes, my dearest, you read that right – Champagne Ice Popsicles! These ice popsicles, named after our friend & Beyoncé fan Valérie, are so easy to pull off, you’ll want to make a lot of them because they’ll go fast. We promise. Use champagne – or, for that matter, prosecco – for the body and then fill it out with sliced strawberries, peach and some pomegranate arils. Indian Summer bliss.

The pretty pink and orangey colours of these popsicles are reason enough to give these a try. Slice fresh grapefruit into thin slices and place a slice or two into each popsicle mold. Mix together equal parts of pink lemonade with grapefruit juice and pour in molds. They’re a little bit tart and a little sweet at the same time. Hydratation goals, check.
Hot meets cold in this alcoholic icy sweet treat. Blend mango, juice & zest of 2 limes, some spoons of golden caster sugar, a pinch of spicy chilli powder and a good dash of tequila. Pour into molds and freeze. Siesta, fiesta, tequila!
Hot coffee on a hot day? Not for us, but thanks. This popsicle even makes your mornings totally cool. Instead of your go-to cup of black gold, fill ice pop molds with cooled brewed black coffee from the French Press, a splash of almond milk and a drizzle of honey or maple syrup. Wake up, go to the beach, get a tan.

These popsicles combine some of the typical summer flavours and are perfect heat-beating pops. Creamy coconut milk, fresh lemon juice, limoncello, a pinch of sugar and fresh basil. That’s really all it takes. Blend, pour into molds, freeze, enjoy. Hey, OK.
