Weisswurst hotdog & Persian salad

What do you need
Persian salad
  • Spelt, 75 g pp
  • 6 carrots
  • 2 tbsp olive oil
  • 2 tbsp honey or maple syrup
  • 2 oranges
  • 3 spring onions
  • seeds of 1 pomegranate
  • a handful of coriander
  • a handful of mint
  • 1 preserved lemon
  • salt & pepper to taste
Dressing for the salad
  • 2 tbsp tahin
  • 2 tbsp water
  • juice of ½ lemon
  • salt & pepper to taste
Weisswurst hotdog
  • 4 hotdogs - we used 'Jasmina' by Monsieur Boudin
  • Bio French bread - we love Bio Bakkerij De Trog
  • Fresh mint
Dressing for the hotdog
  • 100 g sour cream
  • zest of 1 lemon
  • juice of ½ lemon
  • ½ tsp tahin
  • chili flakes and salt to taste
How do you make it
Weisswurst
  1. Heat your Barbecook BBQ.
  2. Shortly grill French bread and Weisswurst.
  3. Make the sour cream dressing by whisking all ingredients together.
  4. Prepare the hotdogs & top off with dressing and herbs + some pomegranate seeds
Salad
  1. Preheat your oven to 200 degrees Celsius.
  2. Cook the spelt by following the instructions on the package.
  3. Wash the carrots, place in a baking tray and coat with olive oil & honey. Bake until crisp on the outside and soft on the inside, for about 20-25 minutes.
  4. Cut the spring onions, cut the oranges 'a vif' & deseed the pomegranate.
  5. Make the dressing for the salad.
  6. Toss all ingredients in a bowl & top off with fresh herbs & drizzle with the dressing.
