Fall Inspired Turnip Fries with Chipotle Aioli

What do you need
For turnip the fries
  • 500 g turnips
  • 1 tbsp cornflour
  • 2 tbsp canola oil
  • ½ tsp ground garlic
  • ½ tsp freshly ground black pepper
  • a few stalks of fresh rosemary
  • ½ tsp fine sea salt - save for last
For the Chipotle Aioli
  • 2 egg yolks
  • Juice of ½ lemon
  • 3 cloves of garlic, finely chopped
  • ¼ tsp sugar
  • ½ tsp salt
  • 2 tbsp chipotle in adobo sauce
  • ¾ cup vegetable oil
How do you make it
  1. Peel the turnips and cut them into fries.
  2. Immerse them into a bowl of cold water for a while.
  3. Mix spices with cornflour.
  4. Take the turnip sticks out of the water, rinse them and dry them with a kitchen towel.
  5. Place them on a baking tray lined with baking paper. Drizzle with 2 tablespoons of vegetable oil and make sure they are evenly coated.
  6. Pre-heat the oven to 225°C.
  7. Sprinkle the spices mixture over the greased turnip sticks. You want to make sure they have enough space around them, since they will turn out even more crispier.
  8. Bake for about 30-35 minutes, turn them after 20 minutes.
  9. For the aioli: place yolks, lemon juice, garlic, sugar, salt, and chipotle in a blender.
  10. Slowly pour in the oil & blend until well combined, stirring from time to time.
  11. Sprinkle the turnips with salt once they come out of the oven & serve immediately with the chipotle aioli.
